What you will need:
- 2 Beyond Meat Sausages diced
- 1 cup of White Rice
- 1/2 Onion diced
- 2 Celery Sticks diced
- 1/2 Bell Pepper diced
- 3 Green Onions diced
- 1 Tomato diced or ½ can of diced tomatoes
- 1 Tablespoon of Louisiana hot sauce or ½ of red peppers
- 2 Bay Leaves
- 1 Tablespoon Pepper
- 1 Tablespoon Cajun Seasoning
- 1 Tablespoon Thyme
- 2 tablespoons of Butter
- 7 cups of Vegetable Broth
- Salt to your taste
How to Cook It:
Heat up a Dutch oven or any deep pot and Add your butter.
Add Sausages and brown them on all sides.
Add all onions, bell peppers, celery and stir for 3 minutes or until onions are translucent.
Add all spices, tomatoes and Louisiana sauce – stir for 2 more minutes.
Add Broth and salt to taste.
Let it simmer for 30-45 minutes or until rice is soft.
